 Do British police always/only do estate versions?  Stateside, the SUV is slowly taking over police duties from large sedans, but station wagons were never popular..

They are used as both educational tools and road policing.

Educational in that it teaches pedestrians and cyclists of a truck drivers blind spots, teaches truck drivers to be more aware of their surroundings in built up areas and junctions.

Road policing in that it catches all drivers on their phones, etc... even other truck drivers.

There has been many Polish drivers stopped because they were watching TV while driving, one I've seen, the truck driver was cooking.

Astra s are the most common, the fancier stuff generally goes to the specialist types- roads & armed response. It does vary by region.

Lol. No, each constabulary sources what they need, some will come together to use buying power to get a better price from the manufacturer. But like the U.S., the U.K. varies massively from areas like London, to counties like Cumbria who only have a population of less than 600,000 spread out over a far far greater area. So each buy what they want for any given task.

Almost every force has a fleet of Mercedes vans, Vauxhall, Ford, Kia, etc... cars for beat work and then higher powered larger cars for roads policing, armed response, rural areas (where they need to carry a lot of equipment), all terrain bikes and pickups for rural land policing.

Some of the vehicles aren't even owned but leased.

Depends on local manufacturers as well, in the Midlands, where I live and where JLR is based, I see slightly more Land Rover and Jaguar police cars, although Skodas and BMWs seem to be the most popular, with the unmarked  police interceptors being primarily Skoda, BMW and Audi Estates, all in dark colours.
